Green Beans

2 c green beans, plant-end trimmed
2 t cornstarch
1 T turbinado or brown sugar
pinch crushed red pepper or cayenne pepper
2 T soy sauce
1 1/2 T red wine vinegar
1 T water
6 large cloves garlic
1/4 t black pepper
2 t olive oil

  1. Steam green beans for 2 min, then dump into large bowl.
  2. In a microwave-safe bowl, add cornstarch, sugar, red pepper, soy sauce, vinegar, and water. Whisk until smooth.
  3. Microwave sauce on high for 30 sec. Remove from microwave and whisk. Microwave again and whisk. Continue until sauce is thickened to the consistency of gravy.
  4. Slice garlic crosswise into pieces about 2 mm thick. Add to green beans.
  5. Add thickened sauce to green beans and garlic and toss. Add black pepper and oil and toss.
  6. Preheat air fryer at 400°F for 3 min.
  7. Cook at 400°F for 12 min or until edges of green beans are blackened.
