Apple Crisp

Great with vegan vanilla ice cream!

1 large or 2 small apples
2 t lemon juice
3 T whole almonds, with skins
3 T quick oats
3 T maple syrup
1 T water
2 t walnut oil or peanut oil
1/8 t salt
1/2 t cinnamon

  1. Slice apples, then cut into 1-inch pieces. No need to peel. Place in large bowl and toss with lemon juice. 
  2. Put almonds in blender (for Vitamix turn speed to 8/10). Turn on for 2 sec. Almonds should be mixture of small pieces and powder. Don’t let them become all powder. A few big pieces are fine.
  3. Add almonds and remaining ingredients to apples. Toss using two spatulas until apples are coated evenly. Let sit for 10 min to allow oats to hydrate.
  4. Remove rack from air fryer and preheat at 400°F for 3 min.
  5. Dump apples on bottom of air fryer and spread out evenly with spatula. Scrape out any remaining coating in bowl on top of apples.
  6. Cook at 375°F for 12 min. Scrape out crisp with spatula and serve.

Notes

  • I like Kanzi or Envy apples for this recipe. These new varieties are very crisp and maintain their firmness after cooking. Granny Smith apples are a good standby — or a mixture of Granny Smith and Macintosh — the Macintosh will become mush but what great flavor!
  • Don’t cook more than this amount at one time. If you want to double, etc., the recipe, cook in batches, 1 large apple amount at a time, and wash (ha!) air fryer between batches.
