Garlic-Lemon-Cashew Cream

I am addicted to this sauce. I serve this sauce with Basic Tempeh and cauliflower or brussels sprouts over rice. Sometimes I mix some green peas into the rice.

5 large cloves garlic, separated but unpeeled
1/2 c raw cashews
1/2 t salt
1/2 c water
juice of 2 or more lemons

  1. Toast unpeeled garlic in air fryer at 300°F for 9 min.
  2. Let garlic cool briefly, then peel and trim bottoms of cloves.
  3. Place all ingredients in blender with just the juice of 2 lemons. Blend on high for 1 min. Taste. Add additional lemon juice if desired.

Notes

  • Garlic is quite mild when toasted this way. Garlic fiends can increase the amount.
  • Salt can be reduced to 1/4 t. With all the lemon juice, salt is not that necessary.
  • If the sauce is too lemony for you, decrease lemon juice and increase salt.
